Salmon with Soy Wasabi Glaze

This is an UNBELIEVABLY GOOD recipe I got from my friend Mary White after she served it to us in her home in Pender Harbour. It’s easy and packs a serious flavour punch.

Ingredients

  • 6 tablespoons unsalted cold butter
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons soy sauce
  • 2 tablespoons prepared wasabi paste
  • 4 6-oz wild salmon fillets
  • a little vegetable oil (or spray)
  • sea salt and freshly ground black pepper
  • 3 green onions, thinly sliced

Directions
In a small saucepan over medium-high heat, stir together the butter, soy, lemon, and wasabi to taste. Bring to a boil. Reduce the heat to medium and cook, stirring occasionally, until the glaze thickens slightly, about 5 minutes. Taste and season with the salt and pepper. Remove from heat.

Meanwhile, spray a large nonstick skillet with oil and place over medium-high heat. Add the salmon and cook, turning once, until the fish is browned on the outside and opaque in the center, about 4 minutes per side, depending on the thickness of the fillet. Spoon the glaze over the salmon. Serve hot.
